Fettucini Carbonara

Here’s a really quick and simple recipe for those evenings when you get home from work and want something really nice, really quickly. The other great thing about this recipe is that you can freeze the leftovers for another night.

Fettucini Carbonara

The ingredients you’ll need are;

  • Fettucini (fresh is best, but packet is ok)
  • Prosciutto (approx. 5-6 slices)
  • 2 shallots / spring onions
  • 1-2 cloves of garlic
  • Thickened Cream
  • 1 Egg (yolk only)
  • Parmesan Cheese

Cook the Fettucini as per the packet instructions.

Fettucini Carbonara

Slice the Prosciutto up in to strips about 1 cm thick, saute them in a frying pan or pot with some butter or olive oil for a couple of minutes. Add in the chopped shallots, and crushed garlic, cook for a couple of minutes more.

Remove your pan from the heat, combine the cream and egg yolk, and then add that to the pan all over the bacon, shallot and garlic mix.

Return to the pan to the heat, add salt and pepper to taste, stir in a handful of grated Parmesan Cheese to thicken the sauce a little.

By now your Fettucini should be about ready, once it is drain off the water and serve on a plate or bowl. Pour the Carbonara sauce over the top, add on a little more Parmesan Cheese to finish it off.

If it’s a 1 on 1 special occasion maybe cut back on a little of the garlic, but other than that it should suit the evening as it’s pretty light and full of flavour.

I think the jar of cream is about 285ml, it’s just one of those standard sized ones that we have in Australia, not sure about the rest of the world.

No, not in a Carbonara, not a fairly traditional Carbonara anyway.

Hey Matt, I am absolutely in love with this recipe!!! And its great too because I have 3 young children who are particularly fussy about eating, but with this I have no problems!

One quick question though, I forgot to get some eggs and now the shop is closed…..is it possible to make this without the egg yolk?

Sorry I didn’t get back to you earlier, was away all weekend.

I think you should’ve been ok to have it without the egg, though you might want to cut back a little on the cream as well.

If you ended up making it that way let me know, I’d be interested in seeing how it turned out.

Hi Mat,

Thanks for getting back to me, hope you enjoyed your weeked….the carbonara turned out to taste exactly the same!! I also didnt have any spring onion on me so I just used a normal white onion and my husband and I couldnt taste any difference, so it was great!!!

I actually use a 600ml bottle of cream when making your recipe, it doesnt seem to cause any harm and it actually seems to make a larger amount….I can feed my husband, myself and our 3 boys and still have enough leftovers to freeze and use as a side dish!!

Normally we can get four serves out of this recipe, but if you like lots of sauce you might need to increase the quantities a little.

My son has been asking me to make fettuccini carbonara for ages. Didn’t have a recipe so we googled and found yours. It was so easy to make and having the pictures was great but best of all it tasted fantastic. As good as a restaurant meal. My son loved it and so did the rest of the family (6 of us) now they ask for it every week. Thanks for a great recipe.

the recipe was fantastic, family favourite. My family rates it 4.5 out of 5. My really fussy brother loves it. i have 2 questions. Q1 how do you make the sauce thicker? Q2 how do you stop the pasta from sticking. I loved the pasta so much. i thank you for having a website and giving out your experienced recipes. cheers

I would, but I don't actually like mushrooms……however I've heard a few people who put mushrooms in their Carbonara, it's not really Carbonara anymore but apparently quite tasty.

Hi Mat,
A veriation on this as a low fat alternative, is to use Carnation Light and Creamy, instead of the cream with a low fat grated parmesan. Just wanted to let you know that this is a fantastic recipe, thank you!

Way to overreact Bruce.. How about a 'hey just wondering what the quantities are?' or something like that…comes across a lot better than 'this is really stupid'

For the record, I'm not a chef, I'm just a guy who happens to blog some stuff he cooks at home.

Add as much Fettuccini as you need, a full packet normally feeds 3-4 adults, I use a full jar of cream (think they are 365ml or thereabouts), and just add a 'handful' of Parmesan Cheese.. Everything else on the recipe has their quantities so you should be right to rock.

Thank you so much for this recipe! Carbonara is one of my favourite all time dishes but I have always been so daunted to try it! I have tried home made versions and carbonara from a jar and packet but goodness they are all pretty disgusting!! I was completely stunned when I managed to make a delicious Carbonara first time – just like the one my favourite cafe used to make (before they stopped doing it so I stopped going!!). Thank you so much for your generosity in giving this recipe for free – it is currently being LOVED by my family and friends and tomorrow by my husband on his lunch break!!!
