10 / 365 – Eggs Benedict is one of my favourite ways to start the day, well Eggs Benedict and Coffee.. The hardest thing about making Eggs Benedict is poaching the eggs. Personally I prefer doing them in a pot of hot water with a dash of vinegar in it, though I have been known to poach an egg in the microwave.
Hrmm maybe I need a coffee shot in my 365, not sure how to get creative with it though. I might have to jump on the Google later and see if I can find some inspiration.

How do you make the hollondaise sauce? I usually just buy a pre made one because most recipes look complicated.
I cheat and use the pre-made microwave ones myself.
I’ve attempted hollandaise a few times in the past, it’s reasonably easy if you make sure you’re totally prepped ingredient wise and ready to roll with it.
I must admit though that it’s too much work for too little reward, which is why I go the quick and easy route with the microwave one….
