Winter Time is Risotto Time

Winter is all but upon us in here in Newcastle and winter is one of those times where every cafe seems to offer soups on their menus. I'm not much of a soup man, though I do like a hearty winter warmer, so I'm on the hunt for the best Risotto recipes out there.

Not really a recipe, but a good fun way to deal with leftover risotto or even brand new stuff, especially if it's nice and sticky - roll it up into balls, drop them in some breadcrumbs, and then shallow fry those bad boys in a bit of oil until they're nice and golden crispy on the outside. Good eatin!

I do (if I do say so myself) have a killer of a risotto recipie... see below

you need:
bacon (fat on)
mushrooms (sliced, but leave a few buttons untouched, adds some complexity)
red onion (chopped)
garlic (as many cloves as is your taste, crushed)
white wine
mushroom stock cubes (or chicken or bacon)
aborio rice
water
parmesan cheese (although cream cheese also works a blinder in this)

1) Cut fat and rind off bacon then chuck the rind into a pan to draw the fat out... this is going to be the basis of the fat goodness that everything else cooks in. Once the fat is drawn add garlic, onion and bacon. Cook until onion is translucent.
2) Add aborio rice; make sure it gets a good coating with the bacon fat cook until rice becomes slightly translucent
3) Deglaze with white wine; stir until white wine is evaporated then add more and deglaze again
4) add mushrooms, stock cubes and first load of water
5) Keep adding water until rice is cooked through
6) Just before serving add parmesan cheese and stir well

VOILA! Also freezes a treat and makes nifty aranaci balls

Heresy! Mushrooms are awesome! Conversely I am sure you could add any veggie as a substitute that loves bacon; actually even prawns or somesuch would go nicely with bacon - bacon loves everything

Well yes bacon is awesome and goes with EVERYTHING.. hrmm, bacon wrapped prawns, I'm down with that!
